Ingredients
- 8 oz whole wheat rotini pasta, cooked + drained
- 1 lb lean ground beef
- ½ white or yellow onion, diced
- ½ cup baby bella mushrooms, sliced
- ¼ cup green bell peppers, diced
- 1 jar light spaghetti sauce
- 1 cup low-moisture, part-skim, shredded mozzarella cheese
- 2½ oz turkey pepperoni slices
Instructions
- Preheat oven to 350 degrees.
- Fill a large saucepan with water and bring to a boil. Add pasta and cook until tender. Drain pasta and set aside.
- In a large skillet, cook beef on medium-high heat for about 8 to 10 minutes or until no longer pink. Drain liquid and set ground beef aside.
- In the same skillet, cook onion, mushrooms and bell pepper over medium heat for 3 to 4 minutes or until tender.
- Add ground beef back to the skillet. Stir in spaghetti sauce and cooked pasta.
- Transfer to a greased 9x13 inch baking dish.
- Sprinkle cheese over the top and arrange turkey pepperoni slices.
- Bake uncovered for 25-30 minutes.
